Vegan Turmeric Chai French Toast

Breakfasts are serious business, especially when you have a little bit of extra time on the weekends. To be honest with you, savoury French toast was always one of my favourites and the sweet kind sort of freaked me out a bit. That was until I actually tried it the syrupy version. AND OH MY GOODNESS, those people were on to something! Crispy and melt in your mouth with soft bready centres – delish! So here we are, a vegan version of a much-loved favourite, complete with caramelised banana and hints of turmeric chai within each bite. Anti-inflammatory with the addition of the turmeric and filled with fibre and nutrients such as potassium and vitamin B6 from the bananas! Who said healthy eating was boring?

Vegan Turmeric Spiced Chai French Toast with Caramelised Bananas

(Serves 2)


Vegan Turmeric Chai French Toast

Ingredients


For the French toast:

  • 4 sliced of toast, a day or two old is best

  • 1 banana

  • ¾ cup of milk

  • 1 tbsp Ginger & Co’s Turmeric Spiced Chai powder

  • 1 tsp arrowroot flour

  • ½ tsp vanilla essence (optional)

  • 2 tbsp Coconut oil

For the Caramelised bananas:

  • 2 bananas, sliced

  • 2 tbsp coconut oil

  • 2 tbsp coconut sugar

Topping inspiration

  • Toasted coconut flakes

  • Toasted almond flakes

  • Coconut yoghurt

  • Favourite liquid sweetener (we used honey, but maple syrup or coconut nectar would also work a treat!)


Method


For the French toast:


Place the banana, milk, Ginger & Co’s Turmeric Spiced Chai powder, arrowroot flour and vanilla essence (if using) into a blender and blend until smooth. Pour into a shallow bowl and let sit for a few minutes to form a batter.


Heat 1 Tbsp of coconut oil in a non-stick pan over medium heat. Dip your bread slices into the batter on each side and pop them into the frypan (we can fit 2 slices into ours, however, different size frypans will vary), fry for around 2-3 minutes on each side, until they are golden. Set aside and repeat with the last 2 pieces of bread.


For the caramelised bananas:


In a pan, heat the coconut oil up over medium heat until it melts, add coconut sugar and let it come together for around a minute. Add in the sliced bananas and let caramelise on each side for about 2 minutes, until they are golden, but not burnt.


Assemble your toast


Stack the French toast slices on a plate and top with caramelised bananas and your favourite toppings.
