The festive season is in full swing, and let’s face it, who doesn’t want to eat, drink and be merry? I sure do. Plus, it’s my birthday on Christmas day so extra celebrating is to be had!
I had a bit of help with this recipe by cocktail extraordinaire, Mr. Dan Kelly. We made up our own ginger syrup with Ginger & Co’s ginger powder then added it to muddled lime, mint and pomegranate seeds to make it extra fresh and festive and topped it up with sparkling water.
You can choose to make this a mocktail if that’s what you’re feeling, but if you want the real deal, vodka brings it all together wonderfully!
Festive Ginger Cocktail
½ cup of water
½ cup of sugar
2 tbsp Ginger & Co’s Ginger Powder
1 thumb size of ginger, sliced
1 red chilli, sliced
1 lemon, halved
120 ml ginger syrup
120 ml vodka (optional)
½ cup of mint
½ cup of pomegranate seeds
Squeeze the lemon juice into a saucepan and then add the whole lemon. Add all other ingredients and bring to the boil, let it simmer for around 15 minutes. Strain the liquid into a jar.
In a large jug, muddle vodka (if using) with a few slices of lime, ¼ cup of pomegranate seeds and ¼ cup of mint. Add ginger syrup, ice and top with sparkling water. Garnish with extra mint, pomegranate seeds and lime slices.
