We’re all for green everything now the holiday season is over. New Year resolutions are in full swing and eating better is always on the list. We want to fit as many nutrients as we can into our meals and focus on including more plant-based proteins into our diet, while always keeping things simple and full of flavour.
This matcha, edamame and avocado smash (made with Ginger & Co's 100% Premium Japanese Matcha) ticks all the boxes:
Chock full of nutrients
Eat it with crackers and crudités, top your favourite bread with it, add it into your nourish
bowls or just eat it by the spoonful – this smash is your new staple.
Matcha & Edamame Avocado Smash
1 cup of edamame beans (thawed or pods cooked and beans removed)
2 Tbsp olive oil
1 Tbsp lemon juice
1 Tbsp pickled jalapenos (plus one tbsp of the juice)
1 Tbsp french shallots, finely chopped (any type of onion would work)
1 clove of garlic, minced
Salt and pepper, to taste
In a blender or food processor add edamame, shallots, garlic, jalapenos (and juice) and olive oil and pulse until beans are broken down and everything has come together. In a bowl, mash avocado, add lemon juice, Ginger & Co Matcha Powder and edamame mix. Combine everything together and season with salt and pepper. Serve on a plate or in a bowl and top with your chosen toppings.
